Green Tomato Casserole
This was a particular favorite of mine the years I had my own garden. Your local market can usually find you some green tomatoes if you aren’t wondering what to do with the ones on the vine. Any left over sauce can be chilled and used as a tasty salad dressing. The recipe came to me via my friend Annie. Ingredients: Preheat the oven to 350 degrees. In a small skillet, sauté‚ the finely chopped onion and the garlic in the hot butter or oil, until soft and translucent. Add the tomato sauce. Cut the green tomatoes in half, and arrange them in a single layer in a baking dish. Sprinkle them evenly with the brown sugar. Pour the tomato sauce over them. Bake them, covered, for 45 minutes, or until tender. Remove them from the oven, leaving the heat on. Drain off some of the hot tomato sauce, and mix it with the sour cream. Pour the new sauce over the tomatoes, and return the dish to the oven, uncovered, for a few more minutes, until heated through. Serves 4.
